Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
with red onions and smoked ham
Roll out the tarte flambée dough on a baking sheet. Mix the crème fraîche with about 1/2 teaspoon of salt until smooth and spread over the dough. Then sprinkle with coarse black pepper and fresh thyme or finely chopped rosemary. Peel and core the pear, and cut into slices about 0.5 cm thick. Arrange the pear slices on the dough and sprinkle the Gorgonzola in small flakes on top. Make sure to add a little Gorgonzola to each pear slice. Thinly slice the onions and spread them over the dough. Preheat the oven to 210°C (top/bottom heat) and place the baking sheet on the lowest rack. After 10 minutes of baking, cut the ham into strips and arrange them on the tarte flambée. Bake for another 3-5 minutes until the desired degree of browning is achieved. Serve the tarte flambée. This recipe yields one sheet of thin, crispy tarte flambée. It serves approximately 2 people.
