Ingredients for 4 servings:
- 125 g butter
- 200 g flour
- Salt
- pepper
- 150 g ham
- 200 g bacon
- 4 onions
- 1 garlic clove(s)
- ½ bunch chives
- 7 eggs
- 200 g Emmental cheese, freshly grated
- 150 ml cream
- 50 ml milk
- Flour for the work surface
- Fat for the mold
Instructions
Working time approx. 25 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 50 minutes; Total time approx. 2 hours 15 minutes
with garlic and chives, for a springform pan with a diameter of 24 cm.
Knead the butter with flour, 3 tablespoons of cold water, and a pinch each of salt and pepper into a smooth dough. Cover and let rest in a cool place for about 1 hour. Dice the ham and bacon. Peel and chop the onions and garlic clove. Mix with the ham and bacon and season with salt and pepper. Wash the chives, shake dry, and chop. Fold into the mixture. Preheat the oven to 200°C (180°C fan-assisted oven). Roll out the dough, place it in a greased 24cm springform pan with your hands, and pull up an edge. Spread the ham mixture on top. Whisk the eggs with the Emmental cheese, cream, and milk, and pour over the ham. Bake the quiche in the oven for about 50 minutes.
