Ingredients for 3 servings:
- 2 onions
- 3 cloves garlic
- 1 red bell pepper(s)
- 500 g minced meat
- 2 tbsp olive oil
- 2 tbsp tomato paste
- 1 gr. can/n tomato(s), (Pizza tomatoes)
- 1 gr. can/n kidney beans
- 1 small can of corn
- 100 g sour cream
- 2 tbsp flour
- 2 tbsp mixed herbs of your choice
- salt and pepper
- Cayenne pepper
- Cumin, ground
- sugar, brown
- 3 packs of puff pastry, from the refrigerated section
- 1 bag of chips (tortilla chips, nachos)
- 1 bag of cheese, grated

the alternative to the taco
Peel and chop the onion and garlic, and roughly dice the bell pepper. Brown the minced meat in hot oil, add the diced bell pepper, onion, and garlic, and fry. Add the tomato paste and fry. Add the tomatoes, bring to a boil, and reduce slightly. Add the kidney beans and corn to the minced meat. Mix the sour cream with the flour and herbs, stir in, and season with the spices. Grease three 26cm quiche dishes and line with the puff pastry. Spread the minced meat mixture on top. Sprinkle with tortilla chips and cheese. Bake in a preheated oven at 180°C (fan oven) for 30 minutes until golden brown. Serve with thinly sliced iceberg lettuce, if desired.
