Texas-Style Onion Jam

Ingredients for 1 servings:

  • 500 g onion(s), red
  • 150 g bacon, fattier
  • 40 g garlic
  • 40 g ginger
  • 1 chili pepper(s)
  • 1 apple
  • 175 g sugar
  • 35 g sugar beet syrup
  • 500 ml apple cider
  • 10 g cocoa powder or baking cocoa

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 3 hours 30 minutes; Total time approx. 4 hours

Cut the bacon into small cubes and fry in a large pan over low to medium heat. Meanwhile, peel the onions, halve them, and cut them into half rings. When the bacon is translucent, add the onions and fry over medium to high heat. Meanwhile, peel and roughly chop the garlic, ginger, and apple. Puree them with the chili pepper (with or without seeds, depending on your preference) in a blender or with a hand blender. Once the onions are slightly browned, add the purée and fry. Mix the sugar with the beetroot syrup and add it to the pan. When the sugar has caramelized, deglaze with the cider. Simmer over medium heat (approx. 3 hours). Stir in the cocoa powder at the end. While still hot, pour the jam into jars and seal them. Store the jars in a cool place and enjoy the onion jam on bread or as a side dish with meat.
