Ingredients for 4 servings:
- 2 tbsp oil
- 1 tbsp curry paste, red
- 3 tbsp garlic, roughly chopped
- 3 shallots, finely chopped
- 600 g minced meat, mixed
- 2 tbsp fish sauce or soy sauce
- 400 ml coconut milk
- 2 tsp sugar
- 40 g basil, chopped

Heat the wok over medium heat and add the oil. When the oil is very hot and slightly smoking, add the curry paste and stir-fry for about 1-2 minutes. Add the roughly chopped garlic and finely chopped shallots and stir-fry for another few minutes. Add the minced meat and stir-fry until cooked through and crumbly. Add the fish or soy sauce, coconut milk, and sugar and stir-fry for another 3 minutes. Finally, stir in the chopped basil and stir-fry for about 1 minute. Serve with rice.
