Thai Red Vegetable Fritters

Ingredients for 4 servings:

  • 1 large parsnip(s)
  • 1 large carrot(s)
  • 5 cm ginger
  • 1 garlic clove(s)
  • 1 tbsp curry paste, red
  • ½ tbsp Thai chili paste (Nam prik pao)
  • 2 eggs
  • 50 g flour
  • salt and pepper
  • Ghee or vegetable oil

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Peel the parsnip and carrot and coarsely grate both, ideally using a grater. Peel and finely grate the ginger, peel the garlic clove and finely grate it. Mix the vegetables with the curry paste and chili paste in a bowl. Beat the eggs and flour into a batter and stir in the vegetable mixture. Season with salt and pepper. Heat ghee or oil in a pan. Drop the mixture into the pan by the spoonful and press down with a spatula. Cook for about 4 minutes per side, until the fritters are golden brown and crispy. The specified quantity makes about 8 fritters. Serve with a yogurt dip or Thai chili sauce.
