Ingredients for 8 servings:
- 3 zucchinis
- 1 chili pepper(s), red
- 3 cloves garlic
- 3 onions
- ½ kg turkey breast or chicken breast, optionally shrimp
- ½ liter vegetable broth
- 1 tbsp lemongrass
- 3 kaffir lime leaves
- Ginger, a few thin, fresh slices
- 2 cans of coconut milk
- 1 bag(s) of spice paste (Tom-Ka-Paste)
- ½ bag(s) of spice paste (tom yum paste)
- oil
- 1 tsp salt or sambal badjak to taste
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Split the chili pepper, rinse out the seeds, and cut the pepper into thin strips. Finely chop the onions, bell peppers, garlic, and zucchini. Cut the meat into strips and fry them with the onions, chili peppers, and garlic in a pan with oil until tender. Season with a little salt, remove from the pan, and keep warm. Cook the remaining vegetables in the oil in the pan, then add the vegetable stock. Then add the meat, the paste, lemongrass, and coconut milk and simmer for about 20 minutes, stirring occasionally.
