Ingredients for 2 servings:
- 125 g couscous
- 2 tomatoes
- ½ cucumber(s)
- Lemon balm
- basil
- Parsley
- mint
- Pimpinella
- chives
- olive oil
- Salt
- pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Prepare the couscous according to the package instructions. Allow the cooked couscous to cool. Meanwhile, finely chop the herbs and finely dice the tomatoes and cucumber. Mix all ingredients with the couscous. For the marinade, whisk together salt, pepper, and olive oil. Pour over the couscous, mix gently, and let the dish marinate for 30 minutes.
