The classic: Bruschetta

Ingredients for 4 servings:

  • 1 ciabatta
  • 4 large beefsteak tomatoes, ripe
  • 4 cloves garlic
  • 8 tbsp olive oil, cold pressed
  • Basil, fresh
  • pepper
  • Salt
  • possibly cheese (Pecorino)

Working time approx. 20 minutes; Total time approx. 20 minutes

Italian for gourmets

Preheat oven to 200 degrees Celsius. Blanch the tomatoes in hot water, peel, deseed, and dice. Slice the bread and bake for about 10 minutes. Crush the garlic, spread it on the warm bread, and drizzle with half of the oil. Mix the tomatoes with the chopped basil and the remaining oil, season with salt and pepper, spread it on the bread, and garnish with basil and, if desired, fresh pecorino (Italian hard cheese made from sheep’s milk). The meal is quick to prepare, but eaten slowly, engaging all the senses and allowing time for conversation, with wine and a final espresso: black, sweet, and hot. This is the Italian way of life.
