  • 400 g wheat flour type 550
  • 100 g wheat flour type 1050
  • 80 g butter
  • 1 egg(s)
  • 15 g salt
  • 100 ml milk
  • 150 g water
  • 30 g honey
  • 30 g yeast
  • some milk

Makes 10 buns – ideal for burgers and sandwiches. For the starter dough, warm the milk and water to lukewarm. Stir the honey into the warm milk and water mixture. Crumble the yeast into the liquid and stir well until dissolved. Let the mixture stand for about 10 minutes, until the yeast begins to foam and bubble. Mix both types of flour in a large bowl. Add the butter, salt, and egg. Pour the yeast mixture into the bowl. Using the dough hook of a hand mixer or a food processor, knead everything into a smooth dough. The dough should be elastic and slightly sticky. Cover the dough with a damp cloth and let it rise in a warm place for about 2 hours, until it has noticeably increased in size. Place the dough on a lightly floured work surface and knead briefly. Divide the dough into 10 equal portions, using a kitchen scale. Shape each portion into a ball and place it on a baking sheet lined with baking paper. Cover the formed buns and let them rise again for about 30 minutes to 1 hour, until they have significantly increased in size. Preheat the oven to 200°C (top/bottom heat). Whisk the egg and a little milk in a small bowl and brush the buns with it. Bake the buns in the preheated oven for about 10 minutes, until golden brown. Immediately after baking, brush the buns again with a little milk to give them a soft crust. Cool completely on a wire rack. Approx. 267 kcal per bun.
