Ingredients for 1 servings:
- 3 m.-large egg whites
- 1 pinch of salt
- 1 tbsp lemon juice
- 150 g powdered sugar
- 200 g almond(s), ground
- 100 g oat flakes, fine
- 200 g dark chocolate, grated
- 3 tbsp almond flakes
Instructions

Preheat oven to 150°C. Line a baking sheet with parchment paper. Beat egg whites with salt and lemon juice until stiff peaks form. Sprinkle in the powdered sugar and beat for 2-3 minutes longer. In another bowl, combine the almonds with the oats and chocolate. Fold this mixture into the egg white mixture. With moistened hands, form them into balls about 2 cm in size and place them on the baking sheet. Flatten the balls slightly and press 4 almond slivers into the dough on one side to create bear claws. Bake on the middle rack of the oven for about 20 minutes. Check frequently to make sure the cookies don’t overcook. Remove from the oven and let cool. These cookies are delicious year-round.
