Ingredients for 4 servings:
- 1.2 kg thick ribs (cut into 4 pieces)
- 750 g beans (green beans, fresh or frozen) or 1 jar broad beans
- 3 onions, diced
- salt and pepper
- n. B. savory
- n. B. broth
- e.g. flour or sauce thickener
- some oil
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Cook the broad beans in broth with a little savory until al dente. Drain, reserving the broth and adding more liquid to make up to about 1 liter. Season the thick rib with salt and pepper and sear in a little oil. Add the onions and sear well. Deglaze with a little broth and simmer for about 1 hour, adding more broth if necessary. Remove the ribs, top up with the remaining broth and thicken the sauce as desired. Season generously with salt, pepper, and savory. Add the meat and beans to the sauce and heat through. Serve with boiled potatoes. Tips: Reduce the amount of meat slightly and add the Mettwurst sausages. Also reserve the liquid from the broad beans and use it.
