Thick rib with sauce

Ingredients for 4 servings:

  • 1 kg rib(s), thick
  • 1 celeriac without greens
  • 1 onion(s)
  • 700 g carrot(s)
  • Paprika powder, sweet
  • Salt
  • 1,500 ml water

Working time approx. 20 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 20 minutes

Peel the celery, onion, and carrots and dice roughly. Rub the thick rib generously with salt and sweet paprika on both sides. Mix the vegetables and place half in a roasting pan, place the seasoned thick rib on top, and spread the other half of the vegetables on top. Now add about 1 liter of water. Braise everything in a preheated oven at 180°C for at least 2 hours. After an hour, add another 500 ml of water (check if more water is needed). At the end of the cooking time, eat the thick rib with your fingers or slice it. Remove the vegetables from the sauce and thicken with a dark sauce thickener if desired, but this is not necessary. Pasta goes particularly well with this sauce. The sauce is delicious.
