Three Delicacies from Farina Bona with Spicy Strawberry Ragout

The perfect three delicacies from farina bona with spicy strawberry ragout recipe with a picture and simple step-by-step instructions.

For the cake:

  • 200 g Eggs
  • 200 g Butter
  • 200 g Sugar
  • 200 g Flour
  • Salt
  • 1 teaspoon Tartar baking powder
  • 0,5 dl Vanillerum

For the foam:

  • 400 ml Cream 35%
  • 1 tablespoon Farina Bona flour
  • 1 tablespoon Sugar
  • 1 pinch Salt
  • 1 pinch Vanilla

For the brittle:

  • 75 g Chopped toasted hazelnuts
  • 1 teaspoon Butter
  • 20 g Farina Bona flour
  • 50 g Cane sugar
  • 1 pinch Salt
  • Parchment paper

For the strawberry ragout:

  • 500 g Strawberries
  • 10 leaf Thai basil
  • 0,5 piece Chilli fresh
  • 1 piece Lime organic quality (juice & peel)
  • 2 tablespoon Maple syrup

For the plate decoration:

  • 4 tablespoon Bonella (ready-made mixture of the Farina Bona type hazelnut cream)
  • 50 g Chopped pistachios
  • Gold powder

Cake (recipe Eischwertig):

  1. Process the ingredients into a batter, place in a buttered form and bake for approx. 35 min. At 175 ° convection / top-bottom heat and allow to cool.
  2. The “heavy egg recipe” is always based on the number of grams of eggs, to which the ingredients butter, flour and sugar are then matched. This recipe can be varied wonderfully e.g. also with lemon and different types of flour combined, including nut flours. In this case, 150 grams of flour, 30 grams of almond flour and 20 grams of Farina Bona flour (roasted corn flour) were baked.

Foam from the Farina Bona:

  1. Heat the cream on the stove, add other ingredients and stir together. Pass through a very fine sieve and allow to cool.
  2. Pour the cooled mass into the Kieser / Spuma and put it in the refrigerator for at least 6 hours. Tip: Instead of “Farina Bona”, you can also work with more vanilla and / or tonka beans!

Brittle from the Farina Bona:

  1. Put the sugar in a wide pan and let it melt over medium heat. Do not stir at first, otherwise the sugar will not caramelize evenly.
  2. As soon as everything is liquid, stir in the butter and caramelize until light brown. Now quickly add the chopped nuts, a pinch of salt and the Farina Bona flour to the pan. Stir briefly until everything is coated in the caramel. Immediately place the caramel mixture on a piece of baking paper and use a wooden spoon to spread it as flat as possible.
  3. Place another piece of baking paper on top of the caramel mixture and roll everything out flat with a rolling pin, as long as the caramel is not quite firm. Depending on the consistency, process the cooled caramel platter to the desired size with a knife with an oiled blade or with your hands and / or chop it into small pieces.

Spicy strawberry ragout:

  1. Carefully wash the strawberries and dry them with kitchen paper. Put 5 beautiful whole strawberries aside for decoration. Cut the remaining strawberries into slices / cubes and mix with the juice / zest of the lime, maple syrup and finely chopped chilli pepper (without seeds).
  2. Finally, carefully fold in the plucked leaves from the Thai basil. Chill the ragout or serve immediately.

Plate decoration:

  1. Use a rubber brush to spread the Farina Bonacream on the plates in one line. Arrange the strawberry ragout and 1 piece of cake, arrange a portion of Farina Bona foam, sprinkle with brittle and decorate everything with gold powder and pistachios.
