Spicy Egg Ragout Geheck Von Ayren
The perfect spicy egg ragout geheck von ayren recipe with a picture and simple step-by-step instructions.
- 8 piece Hard-Boiled eggs
- 3 piece Shallots chopped
- Spring onions work too
- 1 tsp Clarified butter
- 4 tbsp Oil
- 250 ml Dry white wine
- 3 tbsp Cream
- Saffron, sage, thyme
- 1 tbsp Mustard medium hot
- 4 disc White bread
- 1 tbsp Lard or butter
- Boil the eggs hard, quench them, let them cool down a little, peel and finely chop them.
- Fry the shallots, cut into small cubes, in the lard until golden brown. Deglaze with oil and wine, stir in the cream, add the eggs and let them get hot over a mild heat while stirring.
- Season with saffron (can also be omitted), sage, thyme and mustard and keep covered and warm.
- Roast the white bread slices in lard or butter until golden brown on both sides.
- Pour the egg sauce over the hot slices of bread and serve immediately. . I always serve a green salad with a spicy (garlic) sauce.
- Instead of white bread you can also use potatoes (as in the picture), but then it is no longer a medieval recipe!
