Thurgau cider soup

Ingredients for 6 servings:

  • 25 g butter
  • 1 onion(s), chopped
  • 50 g leek, finely chopped
  • 2 tbsp flour
  • 2 apples (sour), chopped
  • 50 g carrot(s), diced
  • 5 dl apple cider, sour (apple wine)
  • 5 dl vegetable broth
  • 1 dl cream
  • chives

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

with sour must or cider

Sauté the onion and leek in butter until translucent, then dust with flour. Add the must and stock and bring to a boil. Add the apples and carrots, simmer gently for 30 minutes, then puree. Add the cream and simmer for a few more minutes. Garnish with chives. Tip: Prepare the day before or the next morning and serve warmed up; it tastes even better and brings out the tart flavor more.
