Thuringian dumplings

Ingredients for 4 servings:

  • 2 kg potatoes, raw
  • 500 g potatoes, boiled
  • 125 ml milk
  • Salt
  • Bread roll(s), diced and toasted
  • nutmeg
  • possibly semolina

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Peel and grate the raw potatoes. Squeeze the water well. Grate the cooked potatoes and mix them with the raw potatoes and milk to form a dumpling dough. Season with salt and nutmeg. If the dough is too loose, add a little semolina. With moistened hands, form dumplings and place a few breadcrumbs into each one. Add the dumplings to boiling water and cook over medium heat.
