Thyme – Roast Turkey
The perfect thyme – roast turkey recipe with a picture and simple step-by-step instructions.
- 600 g Turkey fillet roast
- 5 tbsp Flour
- 1 Egg
- 4 tbsp Breadcrumbs
- 4 tsp Thyme dried or fresh
- Chilli salt
- Salt and pepper
- Oil
- For the sauce:
- 1 Pkg. Soup vegetables – 2 carrots, 1 piece of leek, 1 piece of celery
- 0,5 tsp Tomato paste
- 400 ml Poultry stock
- 200 ml Cream
- To taste 1 pinch garam masala powder
- For the breading: mix the breadcrumbs and thyme. Whisk the egg, season with chilli salt and pepper
- Preheat the oven to 200 ° C (convection 175 ° C)
- Turn the turkey breast in the flour, egg and finally in the thyme breading and press down well. Fry all over in a saucepan or pan in hot oil over medium heat.
- Place in a baking dish and fry in the preheated oven for 15-20 minutes. Then take it out of the mold and keep it warm, wrapped in aluminum foil.
- Roast the vegetables cut into coarse cubes in the remaining frying fat for about 5 minutes. Add some tomato paste and roast it too. Deglaze with the poultry stock and simmer until the vegetables are soft. Pass through a sieve, catch the liquid and pour it back into the pot or pan. Bring to the boil, fill up with cream and reduce a little. Add 1 tablespoon of vegetables and mix in with a hand blender. This gives the sauce a nice consistency and also gives it flavor. Season with salt and pepper. Possibly another Msp Garam Masala.
- Cut the meat into slices and serve with sauce and side dishes on preheated plates.
