Tiger Nuts – Neither Nut Nor Almond

I recently bought a bar with tigernuts. What is that exactly?

A tiger nut is a plant that belongs to the sour grass family, as well as its edible tubers. Other names are tiger nut or chufas.

The tigernut originally comes from Africa. Today it is grown in the Mediterranean region, East India, West Africa and Brazil. The tubers are about acorn-sized and chestnut brown. They have a nutty-almond flavor and are dried for a longer shelf life.

Tigernuts can be eaten raw, cooked or roasted. When ground, they are suitable for bread, cakes, porridge or smoothies. Soaked in water, it becomes a sweet tigernut milk, which can also be used to make ice cream. In addition, tigernuts are used to obtain edible oil with a high proportion of monounsaturated fatty acids (similar to olive oil). Here you can find them mainly processed into flour and flakes in health food stores, drugstores or in well-stocked supermarkets.

Tigernut products contain on average 53% carbohydrates, 24% fat, 4% protein and 14% dietary fiber. They are gluten and lactose free and suitable for diabetics and nut allergies.
