Ingredients for 4 servings:

  • 1 egg yolk, organic
  • 1 shallot(s)
  • 1 small garlic clove(s)
  • 1 small cucumber(s) (Gherkin)
  • 125 ml sunflower oil
  • 50 g ketchup
  • 1 tbsp balsamic vinegar, lighter
  • 1 tsp sugar
  • 1 tsp sea salt
  • 1 tsp mustard, medium hot
  • 2 tsp lemon juice, fresh

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

First, peel the garlic and shallot and roughly chop them. Put the egg yolk and mustard into the bowl of your hand blender and place it in the bowl. Only then add all the other ingredients. Set the hand blender to maximum power. Turn on the blender, count to three, and then slowly pull it upwards. Blend all the ingredients thoroughly; you want a smooth sauce. The sauce is perfect for making ahead and can be stored in the refrigerator. However, please do not let it stand for longer than 24 hours, as it contains a raw egg yolk.
