Ingredients for 6 servings:

  • 3 eggs
  • 50 g sugar
  • 250 g mascarpone
  • 1 pinch(s) lemon peel, zest
  • 200 g ladyfingers
  • 4 cup(s) espresso (small espresso cups)
  • 5 cl Marsala or coffee liqueur
  • Cocoa powder
  • Berries, fresh (strawberries, raspberries or blackberries)

Instructions

Working time approx. 25 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 25 minutes

Separate the eggs. First, beat the egg whites until stiff peaks form, gradually adding half of the sugar. Then, beat the egg yolks with the remaining sugar until creamy. Stir the mascarpone and lemon zest into the egg yolk mixture, then fold into the beaten egg whites. Place half of the sponge fingers in a dish and soak with espresso and liqueur. Top with half of the mascarpone mixture, smooth the surface, and repeat the process. Chill in the refrigerator for a good 4 hours. Dust liberally with cocoa powder before serving. Decorate with fresh berries.
