Ingredients for 2 servings:

  • 4 slices of toast
  • 4 tomatoes
  • 2 slices of cheese (Gouda)
  • 2 slices of cheese
  • 4 Pepper
  • 4 eggs
  • 1 jar tomato sauce, preferably with herbs
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

for vegetarians

First, place two slices of toast on the bottom of the baking dish. Spread tomato sauce over the two slices. Wash and slice the tomatoes. Cut the peppers into small pieces as well. Spread half of them evenly on the toast. Then place a slice of Gouda cheese on each slice of toast. Place two more slices of toast on top and spread with tomato sauce again. Scatter the remaining tomatoes and peppers over the slices. Spread the slices over the mixture, then whisk and season the raw eggs and drizzle them over the top. Bake the whole thing at 180°C for about 20 minutes, until the egg whites set; you may need to leave it in the oven for a little longer or less time.
