Ingredients for 4 servings:

  • 300 g leaf spinach, frozen
  • 10 slices of toast
  • 200 g sheep’s cheese
  • 2 garlic cloves
  • 1 small onion(s)
  • 1 tbsp oil
  • salt and pepper
  • 6 eggs
  • 200 ml milk
  • n. B. lemon zest
  • 50 g cheese, grated
  • Fat for the mold

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour

Defrost and finely chop the spinach. Toast the bread and cut 5 slices in half diagonally. Crumble the feta cheese, peel the garlic, and press it through a press. Finely dice the onion. Preheat oven to 200°C. Sauté the onion and garlic in oil, add the spinach and sauté briefly, mix with the feta cheese, and season. Place whole slices of toast in a greased baking dish, cover with the spinach mixture, and place bread wedges on top. Whisk the eggs with milk, season with salt, pepper, and lemon zest, and pour over the bread. Sprinkle with cheese. Bake in the hot oven for about 25 minutes.
