Toast muffins

Ingredients for 6 servings:

  • 6 slices of sandwich toast
  • 12 slices of bacon (breakfast bacon)
  • 6 eggs
  • 1 pinch(s) allspice
  • 1 pinch(s) of pepper
  • 1 pinch of salt
  • 12 drops of olive oil
  • 1 bunch of fresh herbs, e.g. parsley, chives

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat the oven to 200 degrees Celsius (convection oven). Line a baking sheet with baking paper. Trim the edges of the toast slices. Roll the slices flat using a rolling pin and cut them in half. Grease a 6-hole muffin tin with a little olive oil and top with the toast. Place the bacon slices on the prepared baking sheet and bake until crispy, about 10 minutes. Place two slices crosswise in each toast hole. Reduce the oven temperature to 180 degrees Celsius (350 degrees Fahrenheit). Crack a beaten egg onto each ham. Season with salt, pepper, and allspice. Bake the toast muffins for about 20 minutes, until the eggs are set. Sprinkle fresh herbs on the muffins and enjoy.
