Ingredients for 4 servings:

  • 4 rolls
  • 12 slices of bacon
  • 4 eggs
  • 4 tbsp Parmesan, grated
  • some pepper
  • possibly herbs

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cut the tops off the 4 rolls and hollow out the bottoms. When cutting the rolls, make sure the bottom is larger than the top so the filling fits inside without spilling out. Place 3 slices of bacon next to each other on each roll half, letting the ends of the ham hang over the edge. Crack a raw egg into each roll. Sprinkle 1 tbsp of Parmesan cheese, to taste, over each egg and season with pepper and fresh herbs. Bake the rolls in the oven at 170°C for about 15 minutes, until the eggs are set. Add the roll tops during the last 5 minutes of baking to crisp them up a bit.
