Toast with zucchini and tomato

Ingredients for 4 servings:

  • 4 slices of toast
  • 4 small tomatoes, fully ripe
  • 1 small zucchini
  • 1 small onion(s)
  • 4 olives
  • Thyme
  • 4 slices of cheese, Bel Paese (or other mild, semi-hard)
  • Salt
  • pepper
  • possibly butter

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to 200°C (fan oven). Lightly toast the bread and butter to taste. Wash the tomatoes and zucchini, slice them thinly, and arrange them on the toast. Season with salt and pepper. Peel and thinly slice the onion and arrange them on the toast. Also thinly slice the olives and arrange them on the toast. Sprinkle a few thyme leaves on the toast, then cover everything with Bel Paese slices. Bake at 200°C (fan oven) for about 4 minutes, until the cheese melts. Then, depending on your taste and the desired browning of the cheese, place under the broiler for about 1 more minute.
