Ingredients for 3 servings:
- 2 eggs
- 4 potatoes, boiled
- 3 slices of toast
- salt and pepper
- Fat
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Breakfast or snack
Whisk the eggs and chop the cooked potatoes as finely as possible (grate if necessary). Combine the potatoes and half of the beaten eggs. Season with salt and pepper. Dip one side of each slice of toast into the remaining egg (to help it stick) and spread the potato mixture on top. Fry on both sides in a pan with a little fat.
