Ingredients for 3 servings:
- 900 g potatoes, cut into cubes
- 200 g tofu, plain or paprika tofu, cut into cubes
- 1 vegetable onion(s), diced
- 1 onion(s), red, diced
- 3 red peppers, diced
- 100 g cherry tomatoes, halved
- 3 tbsp tomato paste
- 1 tbsp ajvar
- 1 tbsp oil (walnut)
- 2 tbsp thyme, fresh or dried
- salt and pepper
- chili flakes
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes
Delicious vegan main course
In a large bowl, combine the tofu paste, ajvar, and oil. Add the remaining ingredients. Mix everything gently and season with spices. Let it stand for a while. In the meantime, preheat the oven to 200°C (top/bottom heat). Line a baking sheet with parchment paper and preheat the oven. Spread the tofu and vegetable mixture on the baking sheet and bake for about 30-40 minutes, turning occasionally.
