Tofu burger

Ingredients for 4 servings:

  • 400g tofu
  • ½ bunch chives
  • ½ bunch parsley
  • 2 eggs, size M
  • 8 tbsp breadcrumbs
  • 2 tsp mustard
  • 2 tbsp soy sauce
  • 1 tsp salt
  • 1 pinch(s) of pepper
  • 1 pinch of chili powder
  • 1 tbsp tomato paste
  • 1 tsp paprika powder
  • Fat for frying

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Mash the tofu with a fork and season with soy sauce, mustard, salt, pepper, paprika, tomato paste, and other herbs of your choice. Add the chives and parsley. Before adding the eggs, taste for any excess salt or soy sauce. Then stir in the eggs and breadcrumbs. Knead everything well, preferably by hand. The mixture should be quite moist, but should easily form into stable, roughly tennis-ball-sized balls and then patties. If the dough is too soft, simply add a little more breadcrumbs. Fry in hot oil for about 4 minutes on each side. The tofu burgers will then be nice and moist on the inside and crispy on the outside. They are perfect for burgers, but also as a main course with red rice, potato salad, or other salad. Makes 10 tofu burgers.
