Tofu curry

Ingredients for 3 servings:

  • 250g tofu
  • 100 g fennel
  • 100 g celery
  • 1 stalk(s) leek
  • 1 orange(s), juice
  • 1 tbsp curry powder
  • 1 can coconut milk, approx. 200 ml
  • Lime juice
  • Honey
  • salt and pepper
  • Soy sauce

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Simple curry with tofu

Chop the tofu, fennel, celery, and leek into small pieces. Heat a splash of oil in a pan and fry the tofu until well browned. Add the fennel, celery, and leek, and after about 2 minutes, deglaze with orange juice. Allow the orange juice to reduce well before adding the coconut milk. Season with salt, pepper, curry sauce, and soy sauce, and finish with lime juice and honey. This also works wonderfully in a wok. Serve with rice. Tip: Use cream instead of coconut milk.
