Tofu side dish

Ingredients for 2 servings:

  • 200 g tofu, natural
  • 2 spring onions
  • 3 tbsp soy sauce
  • 100 ml vegetable stock
  • 150 ml cream
  • olive oil
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Dice the tofu and slice the spring onions. Heat olive oil in a pan and fry the spring onions with the tofu until lightly browned. Deglaze with the soy sauce. Add the vegetable stock to the pan and simmer briefly. Then add the cream and stir in. Season the sauce with freshly ground salt, pepper, and a pinch of paprika. Simmer gently until it is creamy and no longer too runny. I like to eat this tofu version with rice and broccoli florets. But it goes just as well with noodles and other vegetables.
