Ingredients for 4 servings:

  • 1 cup rice
  • 1 onion(s), halved and cut into rings
  • Clarified butter, for the onions
  • 1 tsp sugar
  • Clarified butter, for the vegetables
  • 2 spring onions, cut into diagonal rings
  • 250 g leaf spinach, fresh or frozen
  • Salt

Working time approx. 15 minutes; Total time approx. 15 minutes

Caramelize the onions in clarified butter and sugar, then arrange them in ramekins. Lightly brown the spring onions in a pan with fat. Add the spinach and 1 tablespoon of water and sauté for 2-3 minutes. Season with salt and keep warm. Cook 1 cup of rice with 2 cups of water and a little salt for 5 minutes, then let it swell with the lid on for 15 minutes. Lightly mix all the ingredients and arrange them on top of the onions in the ramekins. Keep warm in the oven before turning out. Ideal with salmon or plain schnitzel.
