Tomato and basil rice

Ingredients for 3 servings:

  • 1 onion(s), approx. 90 g
  • 2 tbsp olive oil
  • 200 g long grain rice
  • 400 ml vegetable stock
  • 1 small can of chopped tomatoes, 400 g
  • 1 pinch of harissa paste
  • ½ tsp, leveled lemon pepper
  • 1 tsp sweet paprika powder
  • 15 g basil leaves, fresh
  • possibly vegetable stock powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

simple and delicious side dish

Peel and finely dice the onion. Heat olive oil in a saucepan and sauté the diced onion until translucent. Add the rice and sauté for 1-2 minutes. Add the broth, tomatoes, and seasonings. Bring everything to a boil, then cover and simmer over low heat for 20 minutes. Season to taste and adjust seasoning if desired. Slice the basil leaves, stir in, and serve immediately.
