Tomato and garlic spread

Ingredients for 10 servings:

  • 1 jar of tomatoes, dried in oil (approx. 280 g)
  • 1 garlic clove(s)
  • 1 egg yolk
  • 1 tbsp mustard
  • 1 tbsp, levelled honey
  • 1 pinch(s) of salt and pepper
  • n. B. Oil (e.g. olive oil or rapeseed oil)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Combine all ingredients in a bowl and puree with a hand blender. If the mixture becomes too thick while blending, you can add more cooking oil (e.g., olive oil or rapeseed oil) to taste. This spread is perfect for grilling, on butter or margarine, or as a dip for nachos. Notes: The tomato oil and egg yolk provide the base, similar to homemade mayonnaise. Because of the raw egg yolk, the spread will only keep for a short time (about 1 week) in the refrigerator. Per serving: approximately 60 kcal.
