Tomato and mozzarella flatbreads

Ingredients for 2 servings:

  • 4 packs of mozzarella
  • 4 tomatoes
  • e.g. olive oil
  • 1 pack of Italian herbs (frozen)
  • e.g. fresh basil
  • 1 pack of cream cheese with herbs, paprika, or similar, to taste
  • 1 large flatbread(s)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Halve the flatbread and cut it apart to make four flatbread halves (you can use a different bread or even smaller flatbreads, as you prefer). Spread with cream cheese and then top with mozzarella and tomato slices. Drizzle with olive oil, if desired, and sprinkle with herbs. Bake in the oven at 200°C (400°F) until the mozzarella has melted and the bread is crispy. If you like, garnish with basil or spread it on the flatbreads before baking for a more flavorful finish. The flatbread is delicious both hot and cold.
