Tomato and Peanut Soup with Fennel

The perfect tomato and peanut soup with fennel recipe with a picture and simple step-by-step instructions.

  • 1 Can Chopped tomatoes
  • 1 smaller Fennel fresh
  • 1 Onion
  • 1 tsp Red curry paste
  • 2 tbsp Peanut butter
  • 2 tsp Rice vinegar
  • 1 tsp Coconut blossom sugar
  • 1 tsp Salt
  • 1 tbsp Oil
  1. Cut the fennel into small cubes. Chop the fennel greens and set aside. Finely chop the onion. Braise the fennel and onion cubes in a little oil.
  1. Add curry paste and sweat for approx. 1 min. Pour tomatoes and water. Let simmer for 15 minutes.
  1. Stir in peanut butter, vinegar, sugar and a little salt and simmer for another 5 minutes. Serve sprinkled with fennel greens.
