Tomato and Peanut Soup with Fennel
The perfect tomato and peanut soup with fennel recipe with a picture and simple step-by-step instructions.
- 1 Can Chopped tomatoes
- 1 smaller Fennel fresh
- 1 Onion
- 1 tsp Red curry paste
- 2 tbsp Peanut butter
- 2 tsp Rice vinegar
- 1 tsp Coconut blossom sugar
- 1 tsp Salt
- 1 tbsp Oil
- Cut the fennel into small cubes. Chop the fennel greens and set aside. Finely chop the onion. Braise the fennel and onion cubes in a little oil.
- Add curry paste and sweat for approx. 1 min. Pour tomatoes and water. Let simmer for 15 minutes.
- Stir in peanut butter, vinegar, sugar and a little salt and simmer for another 5 minutes. Serve sprinkled with fennel greens.
