Winter Baked Vegetables

The perfect winter baked vegetables recipe with a picture and simple step-by-step instructions.

  • 3 small Beetroot fresh
  • 3 Parsnips
  • 5 Carrots
  • 2 size Potatoes
  • 1 Solo garlic
  • 5 Garlic cloves
  • 2 Blood oranges
  • 100 ml Oil
  • 1 tsp Cumin
  • 1 tsp Ground coriander
  • 0,5 tsp Cayenne pepper
  • Salt
  1. Peel and dice vegetables and potatoes. Peel the garlic and cut the solo garlic into pieces if necessary.
  1. Squeeze the blood oranges and mix with the oil and spices and a little salt.
  1. Add vegetables, potatoes and garlic and mix well.
  1. Place on a deep baking sheet and bake in the oven at 200ºC for 45 minutes, turning occasionally.
