Winter Baked Vegetables
The perfect winter baked vegetables recipe with a picture and simple step-by-step instructions.
- 3 small Beetroot fresh
- 3 Parsnips
- 5 Carrots
- 2 size Potatoes
- 1 Solo garlic
- 5 Garlic cloves
- 2 Blood oranges
- 100 ml Oil
- 1 tsp Cumin
- 1 tsp Ground coriander
- 0,5 tsp Cayenne pepper
- Salt
- Peel and dice vegetables and potatoes. Peel the garlic and cut the solo garlic into pieces if necessary.
- Squeeze the blood oranges and mix with the oil and spices and a little salt.
- Add vegetables, potatoes and garlic and mix well.
- Place on a deep baking sheet and bake in the oven at 200ºC for 45 minutes, turning occasionally.
