Tomato and plum tart

Ingredients for 4 servings:

  • 300 g flour
  • 1 tsp salt and pepper
  • 80 g butter
  • 125 ml water
  • 200 g chickpeas, from the jar
  • n. B. herbs, e.g. parsley and basil
  • 500 g tomatoes
  • 150 g plum(s)

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 10 minutes

vegetarian, for a 30cm tart tin

For the dough, knead together flour, salt, pepper, butter, and water and roll out into a 30cm tart pan. Puree the chickpeas with the herbs and season to taste. Spread the hummus on the dough. Slice the tomatoes and plums and arrange them on the tart. Season with salt and pepper. Bake in a preheated oven at 200°C (top/bottom heat) for about 45 minutes on the middle rack. Serve with a delicious salad.
