Tomato – basil – pasta dough

Ingredients for 4 servings:

  • 375 g flour (type 405 or 550)
  • 1 small can of tomatoes, peeled
  • 6 g basil leaves
  • 1 tbsp olive oil
  • 1 tsp salt
  • 3 eggs

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place the flour in a bowl. Make a well in the center. Crack the eggs into the bowl, then add the oil and salt. Stir in the tomato juice. Add more flour or water to the dough as needed, depending on whether it’s too sticky or too dry. Knead the basil leaves into the dough. Let it rest for 30 minutes. Form the dough into noodles using a pasta machine. Hang the pasta to dry. Cook for about 3-6 minutes.
