Tomato chicken skewers

Ingredients for 4 servings:

  • 8 chicken breast fillets
  • 12 cherry tomatoes
  • 1 tbsp olive oil
  • n. B. herbs, various (parsley, basil, chives, rosemary, cress)
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Make a marinade from the olive oil, chopped herbs, salt, and pepper. Roll the inner breast fillets in it and let them marinate, covered, for about an hour. Now take one fillet, skewer it at the thicker end, then skewer a tomato, then enclose it with the thinner end. Next, add a single cherry tomato, then another fillet, enclosing a third tomato, and the first skewer is complete. Repeat this process until all the fillets and tomatoes are skewered (two fillets and three tomatoes per skewer). You can let the finished skewers marinate until ready to grill. Then grill or pan-fry them for 10 to 15 minutes. Note: The inner fillets can of course be replaced with simple chicken or turkey breast, cut into strips, but I find it easier this way.
