Tomato clafoutis

Ingredients for 4 servings:

  • 80 g butter
  • 125 ml milk
  • 4 eggs
  • salt and pepper
  • 50 g Parmesan, freshly grated
  • 100 g flour
  • 1 packet of baking powder
  • 1 bunch of basil
  • 400 g cherry tomatoes, also colorful ones

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Melt the butter and mix with the milk, eggs, salt, and pepper. Stir in 40g of Parmesan cheese and the flour. Wash the basil, shake dry, pick the leaves, and cut into strips. Stir into the batter. Pour the batter into a shallow, greased dish (24cm cake tin or similar). Wash the tomatoes and spread them on top of the batter. Bake in a preheated oven at 200°C (fan oven) for about 20 to 25 minutes. Check that the clafoutis is fluffy and cooked through; if not, slightly increase the baking time. Sprinkle with the remaining Parmesan cheese and serve. Tip: You can also top with olives, capers, spring onions, and anchovy fillets.
