Tomato Couscous with Chicken Drumsticks

- 500 g Couscous
- 500 g Tomatoes
- 1 Onion
- Oil
- 750 g Vegetable broth
- Harissa paste

- 8 Chicken drumsticks
- 100 ml. Olive oil
- 2 Garlic cloves
- Salt
- Pepper
- Chili powder
- Hot paprika powder
- For the chicken drumsticks, put the olive oil, the chopped garlic, salt, pepper, chilli and paprika in a jar, shake well, brush the chicken drumsticks with it, and leave to stand for several hours, preferably overnight.
- Place the chicken legs on a small baking sheet or something similar and bake in the preheated oven for about 45 minutes until brown.
- Bring the vegetable stock to the boil, stir in the couscous and let it swell.
- Dice the tomatoes and onions and sauté in the oil, stir in the couscous, season with harissa as desired, mix well, put in a bowl, add the chicken legs and serve.
