Tomato Couscous with Chicken Drumsticks

  • 500 g Couscous
  • 500 g Tomatoes
  • 1 Onion
  • Oil
  • 750 g Vegetable broth
  • Harissa paste
  • *****Für die Hühnerbeine*****
  • 8 Chicken drumsticks
  • 100 ml. Olive oil
  • 2 Garlic cloves
  • Salt
  • Pepper
  • Chili powder
  • Hot paprika powder
  1. For the chicken drumsticks, put the olive oil, the chopped garlic, salt, pepper, chilli and paprika in a jar, shake well, brush the chicken drumsticks with it, and leave to stand for several hours, preferably overnight.
  2. Place the chicken legs on a small baking sheet or something similar and bake in the preheated oven for about 45 minutes until brown.
  3. Bring the vegetable stock to the boil, stir in the couscous and let it swell.
  4. Dice the tomatoes and onions and sauté in the oil, stir in the couscous, season with harissa as desired, mix well, put in a bowl, add the chicken legs and serve.
