Tomato cream soup deluxe

Ingredients for 4 servings:

  • 2 can/n tomatoes (pizza tomatoes or canned tomatoes), alternatively 500 g fresh
  • 5 tbsp olive oil
  • 4 tbsp cream cheese
  • 1 small garlic clove(s), pressed
  • Basil, fresh
  • salt and pepper
  • oregano
  • 1 dashes lime juice

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

with cream cheese

Heat the olive oil with the crushed garlic and lime juice in a saucepan. Add the tomatoes, bring to a boil, and continue to simmer gently. Stir in the cream cheese, salt, pepper, basil, and oregano. Transfer the mixture to a blender (or use an immersion blender) and puree. All the ingredients will combine to create a light, foamy soup. Ladle into soup bowls. P.S.: Use canned tomatoes in the winter and fresh, ripe tomatoes in the summer for a guaranteed flavorful soup. (Peel fresh tomatoes first!)
