Hot Dog Surprise

Ingredients for 4 servings:

  • 100 g shallot(s), finely diced
  • 10 g garlic clove(s) (approx. 4 cloves), finely diced
  • 20 g dried tomatoes, finely diced, alternatively tomato paste
  • 500 g minced meat, mixed
  • 20 g breadcrumbs
  • 50 ml mineral water
  • 2 tbsp, heaped Dijon mustard
  • 2 tbsp, heaped paprika powder, sweet
  • 1 tsp, heaped baking powder
  • 1 tsp, levelled white pepper, finely ground
  • ½ tsp allspice, finely ground
  • n. B. Salt
  • 120 g Cheddar cheese (hard cheese made from cow’s milk) in one piece, 4 strips of approx. 30 g each
  • 12 slices of bacon
  • 4 hot dog buns, freshly toasted
  • 2 gherkins, finely sliced
  • 2 tbsp, heaped fried onions
  • e.g. mustard
  • e.g. ketchup
  • e.g. BBQ sauce

Instructions

Working time approx. 25 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 35 minutes

Peel the shallots and garlic cloves and finely dice them. Sauté them in a pan until they begin to brown. Let the mixture cool. Finely dice the sun-dried tomatoes. Place the minced meat, the cooled shallot mixture, the diced tomatoes, and the remaining ingredients for the minced meat dough in a mixing bowl. Knead all ingredients with the dough hook of a hand mixer for 10 minutes until a smooth dough forms. Season the dough with salt and then cover and let it rest for about 30 minutes to swell. Do not add too much salt, as you will also use the bacon. Divide the dough into quarters and spread each out on a work surface to about 12 x 12 cm. Top each with a strip of cheese and roll up, making sure there are no air pockets. Wrap each of the four rolls in three slices of bacon. Press them down lightly. Line a baking dish with a wire rack and place the minced meat rolls on top. Now place the dish in the preheated oven at 180°C (top/bottom heat) on the middle rack for 30 minutes. During this time, the meatballs will be cooked through. Activate the oven’s grill function, raise the dish one rack, and brown the rolls, rotating them several times. To complete the Hot Dog Surprise, cut open the buns (do not cut all the way through) and place a meatball in each one. Distribute the sliced ​​gherkins and roasted onions on top, and add more mustard, ketchup, and barbecue sauce as desired.
