Tomato Essence with Rooster in Pointed Cabbage Leaf
The perfect tomato essence with rooster in pointed cabbage leaf recipe with a picture and simple step-by-step instructions.
Tomato essence
- 1,5 kg Tomatoes
- 1 piece Carrot
- 3 piece Shallots
- 1 piece Clove of garlic
- 0,5 piece Celery
- 50 g Butter
- 1 l Veal stock
- 3 piece Protein
- 6 piece Ice cubes
- 4 tbsp Tomato paste
- 3 piece Leaf parsley branches
- 1 pinch Salt
- 1 pinch Pepper from the grinder
- 0,5 tsp Sugar
- 20 ml Gin
Rooster in the pointed cabbage leaf
- 0,5 piece Chicken breast fillet
- 2 tbsp Cream
- 1 tbsp Breadcrumbs
- 1 pinch Salt
- 1 pinch Pepper from the grinder
- 6 piece Pointed cabbage leaves half
- 5 piece Chive stalks
- 10 piece Cherry tomatoes red
- 10 piece Cherry tomatoes yellow
essence
- For the essence, wash and quarter the tomatoes. Peel the carrot. Peel the shallots and garlic. Wash and clean the celery. Cut everything into cubes of the same size. Heat the butter, sauté the vegetables in it, fill up with the stock and simmer over a mild heat for 15–20 minutes. Take off the stove and put in a cool place.
- Mix the egg whites with the ice cubes, tomato paste and sprigs of parsley and stir into the cooled soup. Place on the stove and slowly bring to a boil over a mild heat, stirring constantly. Season to taste with salt, pepper, sugar and gin. Line a sieve with a cloth and strain the soup through. Heat again briefly.
Pointed cabbage leaf
- Make a farce for the rooster in the pointed cabbage leaf from the chicken breast, cream, breadcrumbs, salt and pepper in a moulinette.
- Blanch the pointed cabbage leaves in boiling water for about 1 minute. Quench in ice water, pat dry and cut to 10 x 10 cm.
- Put 1 teaspoons of chicken farce on each of 1 pointed cabbage leaf and wrap it in the cabbage leaf like a present. Pull the chives through hot water and use it to tie the packets.
- The cherry tomatoes approx. 20 sec. Put in boiling water and immediately quench in ice water. Then peel off the skin. Add the tomatoes to the soup as a decoration.
