Tomato Essence / Basis for Tasty Tomato Sauce
The perfect tomato essence / basis for tasty tomato sauce recipe with a picture and simple step-by-step instructions.
- 2 kg Ripe, aromatic tomatoes
- Salt, cayenne pepper, sugar
- Here is the tomato essence recipe, it may be a lot of work, but the taste experience is all the greater! First of all, cut a few centimeters crosswise into the peel of all the tomatoes “below” with a sharp knife
- Place the tomatoes in a large bowl or saucepan and scald with boiling water, wait a little.
- Now the shell usually begins to detach itself at the interfaces. It is best to skewer the tomatoes individually with a fork on the flower and remove them from the pot and peel the tomatoes with a small knife.
- Let the tomatoes cool down, then they can be processed better. Now quarter the tomatoes and carefully and completely remove all seeds, as they neither add flavor nor are difficult to digest and do not look good in the later sauce because they do not overcook. All that remains now, so to speak, is the pure pulp.
- Cut the tomato pieces smaller again and put them in a saucepan, season to taste with the cayenne pepper and sugar while stirring constantly. Sugar is good and a flavor carrier (as it enhances the tomato flavor). If necessary, it can also be seasoned with salt.
- The whole thing now takes time and the cook’s attention, because constant stirring is called for over and over again so that the tomato pieces do not stick to the bottom of the pot. But don’t work with a pounder or something similar, the tomato pieces disintegrate gradually by stirring. If everything is boiled down to a “clear” mass of the desired consistency, which can take two to almost three hours, you have that desired result.
- Now you can process the extracted essence immediately or fill it into a jar that has been rinsed with hot water (e.g. a clean jam jar) and store it in the refrigerator for some time. Don’t be surprised, but 2 kilos of tomatoes are (only) about the amount for a medium-sized glass full. But the taste will reward you.
- Depending on your taste, this essence is a wonderful basis for all refinements to create sauces with the addition of olives (slices), parsley, capers, balsamic vinegar, basil and and and … (Fig. 3) But also simply on a slice of fresh bread a treat! 🙂
