Tomato jam with apples and red plums

Ingredients for 1 servings:

  • 1.2 kg tomatoes, fully ripe
  • 400 g apples
  • 400 g plum(s), red
  • 10 g ginger, fresh or dried
  • 30 ml apple cider vinegar
  • 1 pinch of salt
  • 2 packs of gelling sugar 2:1, approx. 500 g each

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

Wash the tomatoes, apples, and plums. Quarter the tomatoes. Core and core the apples and plums. Cut the ginger into thin slices or pieces. Place everything in a large pot and simmer for about 30 minutes. Do not add water! Then pass it through a food mill. Add the vinegar, a pinch of salt, and gelling sugar and mix well. Bring to a boil and simmer for 4 minutes, stirring frequently to prevent sticking. While still hot, pour into jars, seal, and let stand upside down for about 5 minutes. Then turn over and let cool. Makes about 15 jars, depending on size.
