Tomato, mozzarella and peach carpaccio

Ingredients for 2 servings:

  • 3 tomatoes
  • 1 ball of mozzarella
  • 1 peach(s), fresh
  • 2 tbsp pine nuts, roasted
  • 4 tbsp Balsamic vinegar bianco
  • 4 tbsp oil (grapeseed or walnut)
  • n. B. herbs (basil, chives, parsley), chopped as desired

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the tomatoes, remove the stems, and slice them. Slice the mozzarella. Wash the peach, halve it, remove the stones, and slice it. Arrange the tomatoes, mozzarella, and peaches on platters or plates in a fan-like pattern. Mix the dressing together and pour over the salad. Sprinkle with pine nuts.
