Tomato pasta bake

Ingredients for 4 servings:

  • 500 g pasta (macaroni)
  • salt water
  • some oil (sunflower oil, olive oil …)
  • 1 onion(s), finely diced
  • 1 tbsp tomato paste
  • 5 large tomatoes
  • 2 large bell peppers
  • 1 tbsp parsley (frozen), finely chopped
  • 1 tsp basil (frozen), finely chopped
  • 8 slices of cheese (Gouda)

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Place the pasta in boiling salted water and cook according to the package instructions. Place the tomatoes in a bowl and pour boiling water over them. Wait 1-2 minutes, then simply peel the skin off the tomatoes. Fry the finely diced onion and tomato paste in a pan with oil. Then chop the bell pepper and add it to the onions. Cut the tomatoes into larger pieces and add them to the pan. Simmer everything for a few minutes (add a little water if necessary). Then add the herbs and season with salt and pepper. Place the pasta in a baking dish and toss well with the cooked vegetables. Finally, cover everything with the cheese slices and bake in the oven at 200°C (top/bottom heat) for about 15 minutes. The cheese should melt and become slightly crispy.
