Ingredients for 4 servings:
- 6 tomatoes
- 3 eggs
- 2 spring onions
- 1 small onion(s)
- 5 tbsp oil
- 3 tbsp vinegar
- salt and pepper

Boil the eggs, rinse, and let cool. Slice the tomatoes and place them side by side on a platter. Slice the eggs and place one egg slice on each tomato slice. Finely slice the green part of the spring onion and the onion. Arrange on top of the tomatoes. Mix the oil and vinegar and season with salt and pepper. Drizzle over the tomato-and-egg mixture. Serve with freshly baked bread and butter.
